This is the second brew kit that I have ordered from Australian Home Brewing Supplies, after the Flighltless NZ IPA that I made in May. Originally, this brew was meant to be ready to go for the Christmas holidays, but that didn’t work out for a variety of reasons, including COVID, so I finally started the brew early in Jan 2021. Hopefully, there will be a bit of summer in which to drink it.
This is meant to be a pretty stock standard German lager. I’m aiming to to make a light, relatively lightly hopped and reasonably strong lager. Perfect for quenching your thirst after working in the yard, or something.
Grain:
4500 g Export Pilsener
150 g Carapils
Hops:
Perle 12.5g @ 60 mins
Hallertau 12.5g @ 15 mins
Perle 12.5g @ 5 mins
Hallertau 12.5g @ 0 mins
Hallertau 25g Dry hopped, 7 days after fermentation.
Yeast:
Saflager S-23 Lager (x 2)
The other thing that I am trying to do with this is a stepped mash infusion schedule. Basically, I am going to try to match it at the following temperatures as I infuse the mash:
64degrees for 30 mins
68 degrees for 15 minutes
72 degrees for 15 minutes
75 degrees for 10 minutes and mash out.
The boil time is 60 minutes in total.
I am also going to add some defloc tablets at 45 minutes into the boil. This is especially important for Lager, which should be clear.
