I wanted to make a big hoppy beer for winter, and I also wanted to make use of my current favourite hop, which is Motueka. When you throw in the difficulties in visiting my normal brew supplier due to pandemic closures, it was time to try something new. That came in the form of Flightless NZ IPA from Australian Home Brewing Supplies, which is a Melbourne organisation that ships home brew supplies.
I was surprised at the amount of grain in this recipe – almost 7kg, which is much more than I usually make. There was also a significant amount of hops, which makes sense for an IPA, but there was also the requirement to dry hop – something which I’ve never done before. There was also two times the amount of yeast which was surprising.
